Everyone has heard that breakfast is the most important meal of the day. But it’s not
always the easiest meal to make with everything else you have to do in the morning. I tend not to even feel like eating, until I’ve been up for at least two hours.
Muffins can be a good solutions to “what to have for breakfast”. Depending on what you put into them they can be fairly healthy as well. They are portable so you can carry your breakfast with you easily, and eat on your coffee break at work. Best of all, they taste great!!!
Healthy choices include;
- dried fruits
When you bake muffins, how many you end up with will depend on the size of the muffin cup in your pan. My favorite is a slightly over-sized cup. Using this I get about 8-9 muffins out of a single recipe. With a standard pan I would get a dozen. With mini-pans probably 24-36 muffins depending how small your cups are.
Using paper liners is sometimes nice, if it’s a special occasion and you’re dressing them up. But I don’t think they are necessary for everyday use. I’ve had really good luck with using just cooking spray on the pan. They pop out very easily for me this way.
Whatever baking you do, you should always use heavy-weight baking pans. If you use the cheap thin ones your recipes are more likely to burn and stick to the pan. The cheap thin pans will also rust after a short while. I like to use restaurant quality pans. They are easy to clean, don’t rust, and nothing sticks or burns ever. They can make you a fantastic baker without doing anything different than you are already doing.
